One of the easiest ways to start growing your own food is by planting herbs. Fresh herbs like basil can elevate any simple meal. Put your basil to work with this delicious lemon and basil roasted asparagus – the perfect garden to table side dish for any meal! 

Makes 4 servings

Total time: 30 minutes 

Directions:

  • Preheat oven to 425F
  • Trim the woody ends from the bottom of your asparagus – an easy way to do this is to bend the end of the asparagus, which will snap at the appropriate point.
  • Place the asparagus on a baking sheet and add 2 tsp olive oil, minced garlic, and salt and pepper.  Toss to combine.
  • Bake for 15-20 minutes, or until the asparagus is tender.  Remove from the oven and squeeze juice from lemon on top, and toss to combine.
  • While the asparagus is cooking, make your breadcrumbs – toast the slices of bread until crispy but not burnt.  Break into tiny pieces using your hands, a food processor, or a mortar and pestle.  (If your bread isn’t breaking up, it may not be dry enough – you can put it on a baking sheet in the oven to continue drying it out).  
  • In a small bowl, mix together the breadcrumbs, herbs, remaining 1 tsp olive oil, and parmesan cheese.  Sprinkle on top of your asparagus and enjoy!
