Thanksgiving Real Food Recipe: Curried Butternut Squash Soup

Nothing goes better together better than warm soup on a chilly day. Add this to your thanksgiving menu to keep your guests warm and satisfied.


  • 1 tablespoon of oil
  • 6 cups chopped butternut squash
  • 2 medium shallots thinly sliced
  • 2 garlic cloves thinly sliced
  • 1.5 tbsp curry powder
  • 1/4 tsp cinnamon 1 can of coconut milk
  • 2 cups broth
  • 2 inch piece of ginger grated
  • 1-2 teaspoon of Sriracha


1. Heat a large heavy bottom pot over medium heat.

2. When hot add oil and heat until it shimmers

3. Add shallots and sauté for 2-4 minutes stirring constantly

4. Add butternut squash, salt, spices, garlic, and ginger and cook for 4 minutes

5. Add coconut milk, broth choice, and Sriracha and bring to a low boil. Then reduce heat to low and simmer for 15 minutes or until squash is fork tender

6. Blend till smooth using an immersion blender

7. Season to taste, serve, and garnish
